Sweet Potato Patties with Red Lentils

1 ripe avocado
1/4 cup fresh cilantro, chopped
1 tbsp lime juice
1 clove garlic
1-2 tbsp water (to adjust consistency)
Salt and pepper to taste
Instructions

Start by preparing the sweet potatoes. Peel and grate them using a box grater or food processor. Squeeze out any excess moisture from the grated sweet potatoes using a clean towel or paper towel.
In a large bowl, combine the grated sweet potatoes, cooked red lentils, breadcrumbs, chopped onion, minced garlic, ground flaxseed (if using), ground cumin, paprika, salt, and pepper. Mix until everything is well combined.
Using your hands, form the mixture into small patties, about 2-3 inches in diameter.
Heat the olive oil in a large skillet over medium heat. Once the oil is hot, place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
While the patties are cooking, prepare the avocado cilantro sauce. In a blender or food processor, combine the avocado, cilantro, lime juice, garlic, water, and a pinch of salt and pepper. Blend until smooth. Add more water if necessary to achieve a creamy consistency.
Once the patties are cooked, remove them from the skillet and place them on a paper towel to drain any excess oil.
Serve the sweet potato patties with a generous drizzle of the creamy avocado cilantro sauce on top. Enjoy!
