Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
In a large bowl, mix together the soy sauce, sugar-free honey substitute, minced garlic, apple cider vinegar, olive oil, ground ginger, black pepper, salt, and red pepper flakes if using.
Add the chicken wings to the bowl and toss them in the marinade until they are well coated. Let them marinate for at least 30 minutes, or up to 4 hours in the refrigerator for more flavor.
Arrange the marinated wings in a single layer on the prepared wire rack.
Bake in the preheated oven for 35-40 minutes, turning halfway through, until the wings are cooked through and have a deep caramelized color.
If desired, garnish with chopped fresh parsley before serving.
Variations & Tips
For a spicier kick, add more red pepper flakes or a dash of hot sauce to the marinade. If you prefer a tangier flavor, increase the amount of apple cider vinegar. For those who are not on a low carb diet, you can use regular honey instead of a sugar-free substitute. To make this dish gluten-free, ensure that the soy sauce used is gluten-free or substitute with tamari. For picky eaters, consider serving the sauce on the side for dipping.
