This hit the potluck and suddenly everyone was grabbing a plate.

Ingredients
1 pound fingerling potatoes, washed and halved lengthwise
2 tablespoons olive oil
3 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
Directions
1. Preheat your oven to 400 degrees F (200 degrees C).
2. In a large bowl, toss the halved fingerling potatoes with olive oil, minced garlic, and chopped rosemary until evenly coated.
3. Arrange the potatoes on a baking sheet in a single layer, cut side down.
4. Roast in the preheated oven for 20-25 minutes or until the potatoes are golden and tender.
5. Remove the potatoes from the oven and sprinkle with grated Parmesan cheese. Return to the oven for an additional 5 minutes, or until the cheese is melted and slightly crispy.
6. Season with salt and freshly ground black pepper to taste before serving.
Variations & Tips
For a vegan version, replace the Parmesan cheese with a sprinkle of nutritional yeast mixed with almond flour for a similar cheesy flavor and crunch. One can also add a pinch of crushed red pepper flakes to introduce a slight heat, or incorporate other herbs like thyme or oregano for a different herbal profile. For an extra zesty kick, add a squeeze of lemon juice and some zest before serving.
