This is a dish my grandma prepared when I was young, and it remains delicious even now!

Oven-Baked Cheesy Corn and Spinach Casserole
This warm and hearty casserole combines the natural sweetness of corn, the wholesome flavor of spinach, and the creamy richness of cheddar cheese. It’s a no-fuss, comforting side dish that’s quick to prepare—ideal for both busy weeknights and festive gatherings.

Ingredients:
Ingredient Quantity
Fresh spinach leaves 2 cups
Corn kernels (drained) 1 can (15 oz)
Large eggs 3
Shredded Cheddar cheese 1 cup
Milk ½ cup
All-purpose flour ¼ cup
Salt ½ teaspoon
Black pepper ¼ teaspoon
Garlic powder ¼ teaspoon
Butter (for greasing) 1 tablespoon
Instructions:
Preheat & Prep:
Set your oven to 375°F (190°C). Lightly butter a medium-sized baking dish to prevent sticking.

Make the Mixture:
In a large bowl, whisk together the eggs, milk, flour, salt, black pepper, and garlic powder until well combined and smooth.
Add the Veggies & Cheese:
Fold in the drained corn, spinach leaves, and half of the shredded cheddar cheese.
Assemble the Casserole:
Pour the mixture into the greased baking dish and spread it out evenly. Sprinkle the remaining cheese over the top.
Bake to Perfection:
Place in the oven and bake for 30–35 minutes, or until the top is golden and the center is firm.

Serve & Enjoy:
Allow the casserole to cool for a few minutes before serving warm.
