This is my favorite meal to come home to! It’s so easy to put together!

– 4-6 bone-in, skin-on chicken thighs
– 1 1/2 cups long-grain white rice, uncooked
– 3 cups chicken broth
– 1 onion, diced
– 2 carrots, diced
– 3 cloves garlic, minced
– 1 teaspoon dried thyme
– 1/2 teaspoon paprika
– Salt and pepper to taste
– 2 tablespoons olive oil
– Fresh parsley, chopped for garnish (optional)
