1/4 cup fresh basil, chopped
1/4 cup fresh chives, chopped

1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup fresh chives, chopped
1 cup fresh blueberries
3 large eggs
1 cup milk
1/4 cup olive oil
1 tablespoon honey
Directions
Preheat your oven to 350°F (175°C) and grease two loaf pans.
In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
Stir in the chopped parsley, basil, and chives until evenly distributed.
Gently fold in the blueberries, being careful not to crush them.
In a separate bowl, beat the eggs and then add the milk, olive oil, and honey, mixing until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Divide the batter evenly between the prepared loaf pans.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
Allow the bread to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.Ad
Variations & Tips
For a different flavor profile, try using different herbs such as thyme or rosemary. You can also add a handful of chopped nuts, like walnuts or pecans, for added texture. If you prefer a spicier kick, consider adding a pinch of cayenne pepper to the dry ingredients. For a dairy-free version, substitute the milk with almond milk or another plant-based milk. This bread can also be made gluten-free by using a 1:1 gluten-free flour blend.
