This is one of my fave breakfast options. It’s also great for parties

1. Preheat the oven to 375 F.
2. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until soft, about 3 minutes. (If adding mushrooms, add in this step)
3. Add the spinach and cook until wilted, about 2 minutes. (If adding ham, add now.)
4. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
5. Add the spinach mixture to the egg mixture and stir well.
6. Pour the mixture into a greased 9-inch pie dish.
7. Top with shredded cheese.
8. Bake for 25-30 minutes or until the edges are golden brown and the center is set.
