Preheat your oven to 400°F (200°C).
In a large bowl, toss the diced zucchini with olive oil, minced garlic, salt, and pepper until well coated.
Spread the zucchini evenly on a baking sheet lined with parchment paper.
Sprinkle the grated Parmesan cheese over the zucchini.
Bake in the preheated oven for 15-20 minutes, or until the zucchini is tender and the cheese is golden brown.
Remove from the oven and garnish with fresh parsley, if using.
Serve warm and enjoy!
Variations & Tips
For a little extra kick, try adding a pinch of red pepper flakes to the zucchini before baking. If you’re a fan of herbs, a sprinkle of dried Italian seasoning or fresh basil can add a lovely depth of flavor. For a cheesy twist, mix in some shredded mozzarella with the Parmesan. If you prefer a stovetop version, sauté the zucchini in a skillet over medium heat until tender, then add the cheese and cover until melted.
