Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.

  2. Season the Potatoes: In a large mixing bowl, combine the diced potatoes with the melted butter, tossing to ensure every piece is thoroughly coated. Sprinkle the Ranch seasoning, garlic powder, onion powder, paprika, and black pepper over the potatoes. Toss again until the potatoes are evenly coated in the fragrant seasoning mixture.

  3. Initial Bake: Transfer the seasoned potatoes to the prepared baking dish and spread them into an even layer. Cover the dish tightly with aluminum foil and bake for 30 minutes.

  4. Add the Toppings: Carefully remove the dish from the oven and take off the foil. The potatoes should be just tender. Scatter the crumbled bacon and shredded cheeses evenly over the top.

  5. Final Bake: Return the dish to the oven, uncovered, and bake for another 15-20 minutes, or until the cheese is completely melted, bubbly, and starting to turn golden at the edges.

  6. Serve and Enjoy: Remove from the oven and let the dish rest for 5 minutes before serving. This allows the cheese to set slightly. Garnish with fresh green onions for a pop of color and freshness. Serve warm and watch them disappear!
