Spread a thin layer of marinara sauce in the bottom of a 9×13-inch baking dish.
Lay a lasagna noodle flat on a work surface and spread about 3 tablespoons of the ricotta and shrimp mixture evenly over it. Roll the noodle up tightly and place it seam-side down in the prepared baking dish. Repeat with remaining noodles and filling.
Pour the remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella and Parmesan cheeses.
Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Let the roll-ups cool for a few minutes before serving. Garnish with extra parsley if desired.
Variations & Tips
For a spicier kick, consider adding a pinch of red pepper flakes to the shrimp while sautéing. If you’re a fan of different kinds of seafood, try mixing in some crab meat or scallops. Vegetarians can substitute the shrimp with sautéed spinach and mushrooms for a delightful veggie version. Use fresh herbs like basil and oregano to elevate the flavors even more.
