This recipe is now my fave breakfast ever, and you can take it on the go
Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or line it with paper liners for easy removal.
Roll out the pie crust on a floured surface and use a round cookie cutter or a glass to cut out circles that are slightly larger than the muffin tin openings.
Gently press each circle into a muffin cup, making sure to shape it to fit the cup.
In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
Divide the shredded cheese, diced bacon or ham, and chopped vegetables evenly among the prepared crusts.
Pour the egg mixture over the fillings, filling each cup about 3/4 full.
Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the quiche cups are set and golden brown on top.

Remove from the oven and let them cool for a few minutes. Gently run a knife around the edges of the cups to loosen them, then carefully remove the quiche cups from the tin.
