This recipe is such a hit with my family, I’m practically required to bring double portions to every dinner
Instructions:
1. Preheat your oven to 375°F.
2. In a mixing bowl, combine the mashed sweet potatoes, 1 cup of brown sugar, ⅓ cup of half and half, ⅓ cup of softened butter, 1 egg, 2 teaspoons of vanilla, and 1 ½ teaspoons of salt. Mix until well combined (using mixer).
3. Transfer the sweet potato mixture to a greased 9×13 casserole dish.
4. In a separate bowl, prepare the topping by mixing 1 cup of brown sugar, ⅓ cup of flour, 1 1/3 cups of pecan pieces, and ½ cup of melted butter. Stir until the ingredients form a crumbly texture.
5. Sprinkle the topping evenly over the sweet potato mixture in the casserole dish.
6. Bake in the preheated oven for approximately 30 minutes or until the top is golden brown and the casserole is heated through.
Remove from the oven and let it cool for a few minutes before serving.
