This spicy favorite is called ‘Christmas Fiesta Bake’ – it always livens up the holiday!
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon.
Add the chopped onion and minced garlic to the skillet, cooking until the onion is soft and translucent.
Stir in the black beans, diced tomatoes with green chilies, corn, chili powder, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes.
Transfer the beef mixture to a 9×13-inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture.
Scatter the crushed tortilla chips over the cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly. Garnish with chopped cilantro before serving.

For a spicier kick, consider adding a chopped jalapeño to the beef mixture. You can also substitute ground turkey or chicken for the beef if you prefer a lighter option. If you want to make it vegetarian, simply omit the meat and add more beans or vegetables like bell peppers and zucchini. For a creamier texture, mix in a half-cup of sour cream or cream cheese before baking. Feel free to experiment with different types of cheese, such as Monterey Jack or a Mexican blend, to suit your taste.
