In a medium bowl, mix the Greek yogurt, honey, and vanilla extract until well combined.
Take four large, clear glass dishes and spoon a layer of the yogurt mixture into the bottom of each.
Add a layer of raspberries and blackberries on top of the yogurt.
Repeat the layers until all ingredients are used, finishing with a layer of berries on top.
Sprinkle granola on top if desired for added texture.
Serve immediately or refrigerate for up to an hour before serving to allow the flavors to meld.
Variations & Tips
For a vegan version, substitute the Greek yogurt with coconut or almond yogurt and use maple syrup instead of honey. You can also experiment with different types of berries such as blueberries or strawberries, or even mix in some sliced bananas for added sweetness. To enhance the flavor, consider adding a sprinkle of cinnamon or nutmeg to the yogurt mixture. For a protein boost, mix in a scoop of your favorite protein powder into the yogurt. If you’re looking for a more indulgent treat, layer in some chocolate chips or a drizzle of melted dark chocolate.
