Slow Cooker Smoky BBQ Pulled Chicken
Servings: 6

Ingredients
2 lbs boneless, skinless chicken breasts
1 cup smoky barbecue sauce
1/2 cup chicken broth
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, sliced
2 tablespoons olive oil
Directions
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until caramelized, about 5-7 minutes.
Place the chicken breasts in the slow cooker. Sprinkle with smoked paprika, garlic powder, onion powder, salt, and black pepper.
Add the caramelized onions on top of the chicken.
Pour the chicken broth and barbecue sauce over the chicken and onions.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
Once cooked, remove the chicken from the slow cooker and shred it using two forks.
Return the shredded chicken to the slow cooker and mix it with the sauce until well coated.
