Ultimate Chocolate Ganache Torte
Instructions:
Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23cm) round cake pans with parchment paper.
In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk together the sugar, eggs, buttermilk, oil, and vanilla extract until smooth. Gradually combine the wet ingredients with the dry ingredients.
Stir in the boiling water until the batter is smooth and slightly thin.
Divide the batter evenly between the prepared pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Prepare the Ganache:
Heat the heavy cream in a saucepan over medium heat until it begins to simmer. Do not let it boil.
Pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let sit for 2 minutes, then stir until smooth.
Stir in the butter until melted and glossy. Set aside to cool slightly until it thickens but remains spreadable.
Prepare the Filling:
In a medium bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until light and fluffy. Set aside.
Assemble the Torte:
Place one cake layer on a serving platter or cake board. Spread a generous layer of mascarpone filling evenly over the top.
