When I’m reducing carbs but still want something tasty, this quick meal is my favorite choice!

In a large bowl, combine the ground chicken, green onions, grated carrots, and minced garlic.
Add the soy sauce, sesame oil, grated ginger, black pepper, and salt to the mixture. Stir well to combine.
Mix in the beaten egg and almond flour until the ingredients are well incorporated.
Using your hands, form the mixture into patties, about the size of your palm.
Heat a non-stick skillet over medium heat and add a small amount of oil.
Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
Serve hot with your choice of sides.
Variations & Tips
For a spicier version, add a teaspoon of sriracha or chili paste to the mixture. You can also swap the ground chicken for ground turkey or pork if you prefer. If you’re avoiding soy, coconut aminos make a great substitute for soy sauce. For added texture, consider mixing in some finely chopped water chestnuts or bell peppers. These patties also freeze well, so make a double batch and save some for later!
