Whenever I put together this recipe, the house smells fantastic. This recipe is a big hit
1. Heat the olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides until nicely seared. Remove and transfer the shanks to a slow cooker.
2. Add browned shanks, veggies, and base (if using) to slow cooker. Follow with beef broth, salt, pepper, and garlic powder.
3. Cover the slow cooker and cook on low heat for 7-8 hours (or high for 4), or until the lamb is tender and easily falls off the bone.
4. Once the cooking time is complete, carefully remove the lamb shanks from the slow cooker and set them aside. Skim off any fat from the sauce that has accumulated on the surface.
For a thicker sauce, pour the remaining liquid from the slow cooker into a saucepan and simmer over medium heat until reduced to desired consistency.
Serve the lamb shanks on a platter, drizzled with the reduced sauce. Garnish with chopped fresh parsley.
