Yellow Squash Tots — Cheesy, Crunchy Veggie Bites

Step 1: Prep Oven and Squash

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Grate the yellow squash and firmly squeeze out excess liquid with a clean kitchen towel. This is key to making crispy tots!

Step 2: Mix Ingredients

In a medium bowl, combine the squeezed grated squash, egg, shredded cheddar cheese, breadcrumbs, garlic powder, salt, and pepper.

Mix well until fully combined.

Step 3: Shape and Arrange

Use your hands or a spoon to shape the mixture into small, tot-sized pieces (~1 inch diameter).

Arrange them in a single layer on the prepared baking sheet.

Step 4: Bake

Bake for 20-25 minutes or until golden brown and crispy.

Step 5: Serve

Serve hot with a side of yogurt-based dip or ranch dressing.

Garnish with chopped parsley if desired.
