Polish Hamburgers (Klupskies)

These tender, savory patties simmered in a rich, creamy mushroom sauce are the ultimate comfort food. The combination of pork and beef creates a wonderfully flavorful and juicy result.

Yields: 6 large patties
Prep time: 20 minutes + 30 minutes resting
Cook time: 1 hour

Ingredients

For the Klupskies Patties:

  • 1 lb ground beef

  • 1 lb ground pork

  • 1 sleeve (about 35) saltine crackers, finely crushed

  • 2/3 cup milk

  • 2 large eggs, beaten

  • 1 small yellow onion, minced

  • 1 small green bell pepper, minced

  • 1 tbsp dried dill

  • 1 tbsp dried parsley

  • 1/2 tbsp garlic powder

  • 1/2 tsp ground nutmeg

  • 2 tbsp butter, for frying

  • Kosher salt and freshly ground black pepper, to taste

For the Mushroom Sauce:

  • 1/4 cup (1/2 stick) butter

  • 2 cups sliced mushrooms (cremini or white button)

  • 2 cloves garlic, minced

  • 2 tbsp Worcestershire sauce

  • 1/4 cup all-purpose flour

  • 4 cups beef stock

  • 2 tbsp sour cream

  • Salt and pepper, to taste
