Healthy Avocado Bread Recipe

Transform a simple avocado into a delicious, nutritious homemade bread! This soft, fluffy loaf is packed with healthy fats, protein, and fiber, making it a satisfying alternative to store-bought bread.


Ingredients

For the Bread:

  • 1 large ripe avocado (200g / 7 oz)

  • 2 large eggs

  • 4 tbsp (60g / 2 oz) flour (wheat, rice, oat, or almond)

  • 1 bunch fresh parsley (30g / 1 oz), chopped

  • 1 tsp (4g) baking powder

  • ½ tsp salt

  • 1 tbsp (15ml) olive oil

  • 1 tbsp flax seeds (for topping)

Optional Filling 1 (Tuna & Egg):

  • 1 boiled egg, chopped

  • 100g (3.5 oz) tuna in water, drained

  • 2–3 green onions, chopped

  • 2 tbsp (30ml) Greek yogurt or sour cream

Optional Filling 2 (Cheese & Egg):

  • 1 boiled egg, chopped

  • ½ medium carrot, grated

  • 50g (1.75 oz) processed cheese, melted
