Banana Peel & Rice Curry Recipe

🥄 Why Use Banana Peels?

Banana peels are:

  • Rich in potassium, magnesium, and fiber

  • Contain antioxidants and anti-inflammatory compounds

  • Promote digestion and reduce food waste


🍛 Ingredients

  • 2 ripe bananas (skins only, preferably organic)

  • 1 cup basmati or jasmine rice

  • 1 can coconut milk

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp grated ginger

  • 1 tsp each: turmeric, ground cumin, ground coriander

  • 1 tbsp olive or coconut oil

  • 1/2 cup vegetable broth or water

  • Salt & pepper, to taste

  • Fresh coriander (garnish)
