Don’t overfill. This is the most common mistake. A loaded tortilla will burst. Stick to about ¾ cup of filling per large tortilla.

Drain the beef well. Nobody wants a soggy wrap. If your beef is greasy, drain it before adding cheese.
Use the right size tortilla. Burrito-size (10-12 inches) works perfectly. Small “fajita-size” tortillas will overflow.
Let the beef cool slightly before adding lettuce. Hot beef will wilt your lettuce into sad, limp greens. Let it sit for 2 minutes off the heat.
Press the wrap before slicing. Use a spatula to gently press down on the rolled wrap to flatten it slightly. This helps it hold together when you cut.
