How to make raspberry cheesecake:
Step 1
Place the biscuits in a blender and blend until finely chopped.
Step 2
Add the melted butter and mix again for a few seconds.
Step 3:
Pour the biscuit and melted butter mixture into the bottom of a 20cm springform pan lined with baking paper and smooth the surface with the back of a spoon. Then, transfer the pan to the refrigerator and let it set for half an hour.
Step 4
Place the mascarpone and robiola in a large bowl
Step 5:
Pour the milk into a jug, add the sugar, and heat, on the stovetop or in the microwave, until the sugar is completely dissolved. Then add the gelatin, previously soaked in cold water and well squeezed, and let it cool.
