1 lb dried split peas, rinsed and sorted
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
6 cups chicken or vegetable broth
1½ cups water
1 smoked ham hock or 1½ cups diced ham (optional)
1 teaspoon dried thyme
1 bay leaf
