Easy Greek Chicken Bowl

Ingredients


For the Greek Chicken:

🍗 1 lb boneless, skinless chicken breasts or thighs
🍋 Juice of 1 lemon
🧄 2 cloves garlic, minced
🌿 1 tsp dried oregano
🧂 1/2 tsp salt
🌶️ 1/4 tsp black pepper
🥄 1 tbsp olive oil
For the Bowl Base:

🍚 2 cups cooked rice, quinoa, or cauliflower rice
For the Toppings:

🥬 1 cup chopped romaine lettuce or spinach
🍅 1/2 cup cherry tomatoes, halved
🥒 1/2 cup cucumber slices
🧅 1/4 cup red onion, thinly sliced
🫒 1/4 cup Kalamata olives (optional)
🧀 1/4 cup crumbled feta cheese (optional for non-vegan option)
For the Tzatziki Sauce:

🥒 1/2 cup plain Greek yogurt
🧄 1 clove garlic, minced
🍋 1 tbsp lemon juice
🌿 1 tbsp fresh dill or parsley, chopped
🧂 Salt & pepper to taste
