Ingredients
For the Chicken and Vegetables:
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 medium onion, sliced
- 1 fresh pineapple, peeled, cored, and chopped into chunks (or 1 can of drained pineapple chunks)
- 2 tablespoons olive oil
