Ingredients

1.2 kg chicken leg meat
15 g table salt
70 g cold cream (30% fat)
1 g dry garlic
1 g ground black pepper
1 g allspice
1 g coriander
2 g paprika
Directions

Prepare the Meat:
Trim any excess fat from the chicken leg meat and cut it into small pieces.
Place the chicken pieces in a food processor and pulse until finely minced.
Mix the Ingredients:
In a large bowl, combine the minced chicken, salt, cold cream, dry garlic, ground black pepper, allspice, coriander, and paprika.
Mix thoroughly until all ingredients are evenly combined.
Form the Sausage:
Lay a large piece of plastic wrap on a clean surface.
Place the chicken mixture in the center and shape it into a log.
Roll the plastic wrap tightly around the log, twisting the ends to seal it securely.
For extra protection, wrap the log in aluminum foil.
