I make parmigiana when I want something light, creamy, and without sauce: it’s made in layers with zucchini and cheese, and it always goes quickly.

A summery, stringy dish, made in one pot, but without the need for sauce or frying. I call it « comforting » parmigiana because it’s quick to make with zucchini, light yet filling, and perfect for a quick lunch or dinner (and it’s also a great option for guests!). It only requires a few ingredients, everything is baked raw, and voila, lunch or dinner is served.

Ingredients
700 g zucchini (approximately 3 large)

150 g cooked ham

200 g smoked scamorza (or light galbanino)

50 g grated Parmesan cheese

1 pinch of salt

Extra virgin olive oil to taste
