Preparation :
1. Prepare the vanilla cream:
In a saucepan, pour the milk (set aside half a glass), add the sugar and vanilla sugar, and heat gently. In a bowl, mix the cornstarch with the set aside half a glass of milk, then add the egg yolks. When the milk is hot, pour in the egg/cornstarch mixture, stirring continuously until thickened. The cream should become smooth and creamy. Remove from heat and let cool.
2. Cake assembly:
In a large rectangular dish, spread a first layer of vanilla cream. Place a layer of biscuits on top. Add a second layer of cream, then another layer of biscuits. Repeat this process depending on the height of your mold (usually two layers of each are enough).
3. Prepare the chocolate topping:
Heat the single cream in a saucepan, then add the chocolate pieces. Mix until you get a smooth, glossy ganache.
