Step 1: Prepare the Filling

Mix in the vanilla extract, lemon juice, and lemon zest (if using).
Step 2: Assemble the Crescent Rolls
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Unroll the crescent roll dough and separate it into triangles.
Spoon about 1 tablespoon of the cream cheese mixture onto the wide end of each triangle.
Roll the dough up, starting from the wide end and tucking in the filling as you go. Place the rolls seam-side down on the prepared baking sheet.
