Life doesn’t get simpler than this delicious dish with just a few packets!
Ingredients
4 chicken fillets
4 large carrots, peeled and cut into chunks
4 medium potatoes, cut into wedges
3 tablespoons olive oil
1 tablespoon dried rosemary
1 tablespoon dried thyme
1 teaspoon garlic powder
Salt and pepper to taste
1 lemon, sliced

Directions
Preheat your oven to 400°F (200°C).
Line a baking tray with aluminum foil for easy cleanup.
In a large bowl, combine the olive oil, rosemary, thyme, garlic powder, salt, and pepper.
Add the chicken fillets to the bowl and coat them well with the herb mixture.
Place the chicken on the prepared baking tray.
In the same bowl, toss the carrot chunks and potato wedges with any remaining herb mixture.
Arrange the vegetables around the chicken on the tray.
Place lemon slices over the chicken and vegetables for added flavor.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is golden brown.
Let the dish rest for a few minutes before serving, allowing the flavors to meld together.
