Preheat your oven to 175°C (350°F) and grease a loaf or round cake pan.
In a bowl, beat the eggs with a pinch of salt until frothy.
Add the sugar and continue beating until pale and fluffy.
Mix in the softened butter, lemon zest, and lemon juice.
Sift in the flour and baking powder, and gently fold until smooth.
Pour the batter into the prepared pan and smooth the top.
Bake for 35–40 minutes or until golden and a toothpick comes out clean.
Optional: Mix powdered sugar and lemon juice to make a glaze, then drizzle over the cooled cake.
