You can easily customize these bites while still keeping the spirit of a 4-ingredient, potluck-friendly appetizer. For a smokier flavor, choose a hickory or mesquite-style barbecue sauce; for a sweeter profile, go with a honey or brown sugar version. If you prefer a leaner bite, use leftover roast beef from a Sunday dinner instead of deli meat, trimming away any large pieces of fat before shredding.

For a slightly sharper flavor, swap part of the mozzarella for provolone or a mild white cheddar, keeping the total cheese amount the same so the bites don’t become greasy.

If you don’t have a round cutter, simply cut the dough into small squares and proceed; they won’t be perfectly round, but they’ll bake up just as crisp and inviting. To scale for a larger crowd, bake two dishes at once, rotating the pans between oven racks halfway through for even color.

For food safety, if you’re using leftover cooked beef, be sure it was cooled promptly after its first use, has been stored in the refrigerator at or below 40°F (4°C), and is used within 3–4 days. Reheat the bites until the beef and cheese are piping hot in the center (an internal temperature of 165°F / 74°C is a good benchmark).

Discard any bites that have sat out at room temperature for more than 2 hours (or 1 hour if the outdoor temperature is above 90°F / 32°C), especially at those warm early June potlucks. Leftover bites can be cooled, refrigerated in an airtight container, and reheated in a 350°F (175°C) oven until warmed through and the cheese is remelted and bubbly.
