Put raw halved bell peppers in the slow cooker and 4 other ingredients to get a meal so delicious your family will be begging for more.

About 15 minutes before serving, sprinkle the remaining 1/2 cup shredded mozzarella evenly over the tops of the peppers. Cover again just until the cheese is melted.

You can also change up the grain: leftover quinoa, farro, or even cauliflower rice will work in place of the cooked rice—just keep the total amount the same.
