Why This Recipe Works
Slow cooking ensures the pork is juicy and tender.
Brown sugar adds a sweet glaze that caramelizes beautifully over the bacon.
Bacon wraps infuse the pork with smoky, savory richness.
Minimal hands-on time — just prep, slow cook, and let the magic happen.
Ingredients
2–3 lbs pork tenderloin or pork shoulder
8–10 slices of bacon
1/2 cup brown sugar (packed)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
Optional: 1–2 tsp smoked paprika for extra depth
Instructions
1. Prepare the Pork
Pat the pork dry with paper towels.
Season all sides with garlic powder, onion powder, black pepper, and smoked paprika (if using).
2. Wrap with Bacon
Lay bacon slices on a cutting board, slightly overlapping.
Sprinkle half of the brown sugar over the bacon.
Place the seasoned pork on top and carefully wrap the bacon around it.
Sprinkle the remaining brown sugar on top.
3. Slow Cook
Place the wrapped pork in a slow cooker.
Cook on low for 6–7 hours or high for 3–4 hours, until the pork is tender and reaches an internal temperature of 145°F (63°C).
4. Optional Broil for Crispy Bacon
Transfer the pork to a baking sheet.
Broil in the oven for 2–3 minutes to crisp up the bacon, watching carefully to prevent burning.
5. Serve and Enjoy
