Soft Banana Bread with Pecans and Delicious Caramel Glaze

Method:
* Preheat the oven and prepare the pan: Preheat the oven to 180°C (static oven). Butter and flour a 20×10 cm loaf pan.
* Mash the bananas: In a large bowl, mash the ripe bananas well with a fork until they become a puree.
* Mix the wet ingredients: Add the cooled melted butter, sugar, and egg to the banana puree. Mix well with a whisk until smooth. Add the vanilla extract and mix again.
* Sift the dry ingredients: In another bowl, sift together the flour, baking soda, and salt.
* Combine the dry and wet ingredients: Gradually pour the dry ingredients into the bowl with the wet ingredients, stirring gently with a spatula or wooden spoon until just combined. Do not overmix, as this will make the banana bread rubbery.
