For the Meatloaf:
1.5 kg (3.3 lbs) Pork neck, butterflied or flattened
3 cloves Garlic, minced
2 tsp Dijon mustard
1 tsp Salt
1/3 tsp Salt (for stuffing)
½ tsp Black pepper
1 tsp Oregano
1 tsp Paprika
2 sprigs Rosemary
4 Sweet peppers, thinly sliced
200 g (7 oz) Cheese, shredded or sliced
Capers, to taste
Green onions, chopped
For the Sauce:
2 tbsp Honey
1 tbsp Mustard
1 tbsp Soy sauce
Directions
Prepare the Meat:
Preheat your oven to 180°C (350°F).
Butterfly the pork neck to create a flat surface. Place it between sheets of plastic wrap and pound gently to even out the thickness.
Season the Meat:
3. Spread the minced garlic, Dijon mustard, salt, black pepper, oregano, and paprika evenly over the meat.
Prepare the Stuffing:
4. Layer the sweet peppers, cheese, capers, and chopped green onions onto the seasoned pork.
Roll the Meatloaf:
5. Roll the pork tightly, starting from one end, and secure it with kitchen twine or toothpicks to keep the stuffing in place.
Prepare the Sauce:
6. In a small bowl, whisk together honey, mustard, and soy sauce.
Cook the Meatloaf:
7. Heat a large skillet over medium heat. Brown the rolled pork on all sides until golden, about 2-3 minutes per side.
8. Transfer the meatloaf to a roasting pan. Brush it generously with the prepared sauce and place the rosemary sprigs on top.
9. Roast in the preheated oven for 1 hour and 30 minutes, basting with the sauce every 30 minutes.

Finish and Serve:
10. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
