This recipe is awesome! It’s even better the day after… if you have the willpower to wait!
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to package directions. Drain and lay them out on a large baking sheet to cool slightly.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
Add the chopped shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes. Remove from heat and set aside.
In a large bowl, combine ricotta cheese, 1 cup of mozzarella, 1/2 cup of Parmesan, the beaten egg, cooked shrimp, and chopped parsley. Mix well to combine.
