Spoon a small mound of the saucy beef (about 1 tablespoon) onto the center of each dough round, leaving a slight border around the edges so the dough can puff and crisp. Divide any remaining beef mixture among the bites so they’re evenly topped.
Drizzle or lightly brush the remaining 1/2 cup barbecue sauce over the tops of the beef-topped rounds, focusing on the meat rather than the exposed dough. This layering gives you a deeper BBQ flavor once baked.
Sprinkle the shredded mozzarella evenly over all the bites, making sure each dough round gets a generous but not overloaded amount of cheese. A light scattering into the gaps is fine; those little melted bits will crisp nicely against the glass dish.

Transfer the dish to the preheated oven and bake for 14–18 minutes, or until the dough edges are golden brown, the cheese is fully melted and bubbly, and any exposed BBQ sauce looks slightly caramelized around the edges. If your oven has hot spots, rotate the dish halfway through for even browning.
Remove the dish from the oven and let the pizza bites rest for 5 minutes. This short rest helps the cheese set slightly so the bites lift out more cleanly and are easier to eat by hand.
Using a small spatula, gently separate and lift out the pizza bites. Serve them warm directly from the glass dish or transfer to a platter. If you like, offer extra BBQ sauce on the side for dipping.
